San Martino extra-virgin Olive Oil is produced, on hillsides 550 m. above sea level, from olives picked off the plant by hand, when they have not yet reached their complete maturation, and immediately pressed in mechanical oil mills.
Thanks to this method of production, San Martino is an oil almost totally lacking in acidity, rich in fruity flavour, organoleptically perfect and biologically pure. This natural production process recalls what Virgil wrote in book II of the Georgics: “… ipsa satis tellus, cum dente recluditur unco, sufficit umorem et gravidas, cum vomere, puges. Hoc pinguem et placidam Paci nutritor olivam”. (earth alone offers enough humour when opened with a hooked tooth, and when ploughed by the share, will give abundant fruits. So cultivate the rich olive-tree beloved by Peace).

ASPECT: Green colour with reflections verging on golden yellow
SMELL: Strong fruity flavour
TAST: Round, full, slightly appetizing and sharp
STORING: Keep the bottle in a cool place away from the light and from sources of heat. Best consumed within 1 year of bottling
RECCOMENDED WITH: It best expresses the intensity of its fruity flavours when used raw on cooked vegetables and salads, soups, roasts, etc.
